How To: Cook shelling beans
Don't be afraid of fresh beans.
Fresh shelling beans can be cooked just as you would a regular dry bean, but without soaking them overnight. They cook quicker than dry beans too, usually within 30 – 45 minutes. We recommend tossing the fresh beans with pasta or cooked greens. If serving with pasta, reserve a little of the cooking water and reduce it with olive oil and fresh herbs. It will yield a silky sauce you can toss with your warm pasta.
