Kitchen Tricks: Citrus Supremes
Want to add citrus to your salad, but not a fan of that bitter pith? Ditch the bitter pith by cutting out the supremes!

To supreme any citrus (firm flesh works best):
- Trim stem and bottom but don’t cut too much fruit off.
- Gently cut away the peel to expose the fruit within. Cut away excess pith as necessary.
- Holding the fruit in your hand, slice along the pith membranes into the center, separating each segment to free the citrus wedge.
- Repeat with the next segment.
- Enjoy your pith free citrus.
