Kitchen Tricks: Citrus Supremes

Want to add citrus to your salad, but not a fan of that bitter pith? Ditch the bitter pith by cutting out the supremes!

To supreme any citrus (firm flesh works best):

  1. Trim stem and bottom but don’t cut too much fruit off.
  2. Gently cut away the peel to expose the fruit within. Cut away excess pith as necessary.
  3. Holding the fruit in your hand, slice along the pith membranes into the center, separating each segment to free the citrus wedge.
  4. Repeat with the next segment.
  5. Enjoy your pith free citrus.
