How To: Get extra crispy latkes at home

Our culinary team’s foolproof tips for crispy latkes at home.

1. Use russet potatoes for the best effect. After grating the potato, squeeze firmly between your hands to remove as much liquid as possible.
2. Grate onion on a sharp box grater instead of using a food processor. You may cry while doing so (!) but this method retains the onion’s texture.
3. Use grapeseed oil or sunflower oil to pan fry. These oils have higher smoke points which allows for a quicker cook time.
4. There are a few different types of flours that can be dusted on the outside of the latkes prior to frying that will help keep your latkes crispy. Potato starch, tapioca starch, and rice flour are all great options.
