For the best tasting turkey, pre-season your turkey at least a day in advance. Two teaspoons of kosher salt (we use Diamond Kosher Salt) per pound of turkey is a good rule of thumb. Make sure to salt both inside the cavity and under the skin. You can also add aromatics like garlic, fresh herbs and lemon.
