The spotlight of this cocktail is the Akashi Ume Whiskey, a white oak whiskey which has been infused with green ume plums and a touch of rock sugar for six months to a full year.

The year that never ends, can wrap on a high note with this new signature seasonal beverage crafted by Bi-Rite’s former alcohol category manager, Liz Rubin. The highlight of the drink is Akashi Ume Whiskey, a white oak whiskey which has been infused with green ume plums and a touch of rock sugar for six months to a full year. It’s a smooth, delicately floral whiskey and maintains its fruity, honeyed, savory notes when mixed into this refreshing cocktail.

Ingredients

1.5 ounces Akashi Ume Whiskey

1/2 ounce lemon juice

1-1/2 ounces apple juice

1/2 ounce simple syrup

Champagne or Prosecco to fill the glass

apple slice or lemon peel to garnish

DIRECTIONS

Add all ingredients except the bubbly to a cocktail shaker with ice. Shake until chilled. Strain into a highball glass with fresh ice. Top with champagne or Prosecco and garnish with an apple slice or a lemon peel.
