Avocado, hard boiled egg, edamame, roasted sweet potatoes, and pickled red onions, served over red quinoa and curly kale. Topped with lemon tahini dressing and a sunflower seed pepitas mix.
When we polled Bi-Rite staff about their favorite new Market Bowl, this super flavorful recipe came out on top. The avocado and quinoa are unctuous and nutty, while the saucy, tangy, sweet potatoes are the unexpected star. Substantial enough to fill you up in the middle of a busy day, this bowl is light enough that it won’t hold you down the rest of the afternoon.
