Filling and tender ramen noodles, tossed with local, organic crumbled tofu, crunchy pickled cucumbers, green onions, and chili garlic sesame sauce, topped with flaked, marinated, roasted Skuna Bay salmon.
Originally inspired by Fuchsia Dunlop’s chilled dishes of Chinese home cooking, our chilled ramen noodles have evolved into a combination of cultures and flavors. Korean gochujang is the spicy backbone for the sauce of crumbled tofu, garlic, ginger, and black vinegar. Pickled cucumbers lend crunch, and marinated Skuna Bay salmon is a worthy companion to the full-flavored noodles. We aren’t sure how close this is to Chinese or Korean home cooking, but we appreciate the inspiration, and we think the result is really tasty!
